~Green Enchiladas~


12 Sm. Flour Tortillas
1 1/2c. Shredded Monterey Jack Cheese
1/4c. Chopped Onion
1-10oz.can White Chicken or leftover chicken diced up

Mix all ingredients in a bowl and place 3Tbs.on each tortilla shell and roll up. Place in a 9x13 pan. Then...
Melt half a cube of Butter in a small sauce pan on low not to burn.
Blend in 1/4c. Flour and stir
Add 2c. Chicken Broth
Bring to a low boil on medium heat stirring constantly till the sauce thickens. Then...
Add 1c. Sourcream
1-4oz. can chopped Green Chile
Blend the sauce and pour over the tortillas. Bake in a preheated oven at *425 for 20 minutes. Remove from oven and sprinkle 3/4c. more shredded Monterey Jack cheese on the top. Return to the oven for 10 minutes or until the cheese is melted. Garnish with chopped green onion and serve with white rice. Very yummy my family loves it!


~My Favorite Quiche~

2-9 inch pie crusts in foil pans
Sprinkle on each pie first...
1c.shredded swiss cheese each
chop up 1lb.bacon,1/2lb.sliced fresh mushrooms,1/3c.chopped onion,1tsp.garlic and saute till bacon is crisp.
divide on each pie and pour on top of cheese
divide 2c.fresh spinach (chopped) on each
Beat 5 eggs,2c.whipping cream, 3/4 tsp.salt,1/4 tsp. sugar, pepper to taste
Pour over spinach and bake in a preheated oven *425 for 15min.Then lower the temperature to *300 for 30min.When a knife inserted comes out clean they are done. Serve with sourcream dollop on top and a nice green salad. My kids love this one and we have the rest for breakfast!


~Easy Alfredo Sauce~

2-8oz.pkg.Cream Cheese cubed and soft
1 1/2c. grated parmesan cheese
1 cube butter
1 1/2c.milk
1 tsp. fresh garlic
pepper & salt to taste
fresh parsley(optional)
In large saucepan stir all seven ingredients over low heat till smooth and creamy. If its to thick you can thin it with a little more milk. Add to your favorite cooked pasta and toss. Garnish with chopped fresh parsley.*Note* I saute chicken, fresh sliced mushrooms, chopped spinach and add to this or use leftover chicken.Shrimpmeat,Salmon is also really good.Familys Favorite recipe!
