~Green Enchiladas~ 12 Sm. Flour Tortillas 1 1/2c. Shredded Monterey Jack Cheese 1/4c. Chopped Onion 1-10oz.can White Chicken or leftover chicken diced up Mix all ingredients in a bowl and place 3Tbs.on each tortilla shell and roll up. Place in a 9x13 pan. Then... Melt half a cube of Butter in a small sauce pan on low not to burn. Blend in 1/4c. Flour and stir Add 2c. Chicken Broth Bring to a low boil on medium heat stirring constantly till the sauce thickens. Then... Add 1c. Sourcream 1-4oz. can chopped Green Chile Blend the sauce and pour over the tortillas. Bake in a preheated oven at *425 for 20 minutes. Remove from oven and sprinkle 3/4c. more shredded Monterey Jack cheese on the top. Return to the oven for 10 minutes or until the cheese is melted. Garnish with chopped green onion and serve with white rice. Very yummy my family loves it!
